  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can chili beans, undrained
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers, undrained
  • 1 (8 ounce) package cream cheese
  • 1 cup shredded Mexican cheese blend
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Bring a large pot of lightly salted water to a boil. Add egg noodles and cook until tender, about 8 minutes; drain.
  3. In a large skillet over medium heat, cook ground beef until evenly brown; drain excess fat.
  4. Stir in corn, chili beans, diced tomatoes with green chile peppers, and cream cheese into the skillet with the ground beef. Cook and stir until the cream cheese is melted and the mixture is well blended.
  5. Mix in the cooked noodles, and transfer to a 9×13 inch baking dish. Cover with Mexican cheese blend.
  6. Bake in preheated oven for 15 to 20 minutes, or until cheese is bubbly and slightly browned.
