Description

These Tomato Sandwich Toasts are a Southern-inspired twist on the classic tomato sandwich, served on golden toasted brioche with mayo, cherry tomatoes, and fresh basil. Light, fresh, and elegant, they make the perfect summer finger food for parties, picnics, or casual snacking.


Ingredients

  • 60 g (¼ cup) mayonnaise

  • 4 slices brioche bread, 2 cm (¾ in.) thick, toasted (about 200 g from a 400 g loaf)

  • 150 g (1 cup) cherry tomatoes, halved or quartered

  • 0.5 g (⅛ tsp) kosher salt

  • 0.5 g (⅛ tsp) black pepper

  • 10 g fresh basil leaves, for garnish


Instructions

  • Slice brioche into 4 thick pieces and toast until golden brown.

  • Wash and cut cherry tomatoes into halves or quarters. Toss with salt and pepper.

  • Spread 1 tbsp mayonnaise evenly over each slice of toasted brioche.

  • Top with seasoned tomatoes.

  • Garnish with fresh basil leaves or ribbons.

  • Slice each toast into 2–3 bite-size pieces. Serve immediately while crisp and fresh.

Notes

Use the ripest cherry tomatoes for the best flavor.

Brioche adds richness; for variation, try sourdough or hearty white bread.

Rub the toasted bread with garlic for extra flavor.

Assemble just before serving to keep bread crisp.

Add a thin slice of mozzarella or a sprinkle of Parmesan for a cheesy variation.
