  • 2 cans condensed tomato soup, 10.75 ounces each
  • 2 cups chicken broth
  • 2 cups skim milk
  • 2 cups half-and-half
  • 1/2 cup chopped sun-dried tomatoes
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 cup grated Parmesan cheese
  • Additional Parmesan cheese for serving, optional

Instructions

  1. Cook the frozen cheese tortellini according to the package directions until just tender.
  2. Meanwhile, combine the condensed tomato soup, chicken broth, skim milk, half-and-half, chopped sun-dried tomatoes, onion powder, garlic powder, dried basil, and salt in a large stockpot.
  3. Place the stockpot over medium heat and stir frequently until the tomato soup blends completely into the liquids.
  4. Keep the soup at a gentle simmer and avoid a hard boil so the dairy remains smooth.
  5. Drain the cooked tortellini well and carefully add it to the hot tomato broth.
  6. Stir in the grated Parmesan cheese until it melts into the soup.
  7. Taste and adjust the seasoning only if needed.
  8. Ladle the soup into bowls and garnish with additional Parmesan cheese if desired.

Notes

  1. Use homemade or low-sodium chicken broth for better control over the salt level.
  2. Do not overcook the tortellini because it will continue to soften in the hot broth.
