Scale
  • 2 1/2 pound tri tip roast
  • 1 1/2 teaspoons garlic salt
  • 1 tablespoon seasoning salt
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon sugar
  • 2 teaspoons garlic powder
  • 1 tablespoon dried or fresh parsley
  • 1/4 cup olive oil

  2. Combine garlic salt, seasoning salt, kosher salt, black pepper, sugar, garlic powder, and parsley
  3. Rub the spice mixture all over the roast
  4. Place in a zip-top bag, add olive oil, and marinate up to 8 hours
  5. Bring meat to room temperature before cooking
  6. For grill: preheat, sear 2-3 minutes per side, then cook over indirect heat 20-25 minutes
  7. For oven: sear in skillet, then roast at 400°F for 20-30 minutes
  8. Cook until internal temperature reaches 130-145°F
  9. Remove and rest for 10-15 minutes
