Description

Healthy roasted butternut squash with ground turkey, couscous, and warm spices for a balanced fall meal.


Ingredients

  • 4 cups butternut squash, peeled and diced
  • 2 tbsp canola oil
  • 1/2 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup couscous
  • 1 cup boiling water
  • 1 lb ground turkey
  • 1 1/2 tsp canola oil
  • 1 1/2 cups red onion, minced
  • 3 cups Swiss chard, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • Juice from 1 lemon

Instructions

  1. Preheat oven to 425°F and roast seasoned squash for 35 minutes, then broil for 3 minutes.
  2. Prepare couscous by covering with boiling water and resting for 7 minutes.
  3. Cook onion, turkey, and seasonings in a pan, then add Swiss chard until turkey is done.
  4. Assemble couscous, turkey mixture, and roasted squash, then finish with lemon juice.

Notes

  1. Use lean ground turkey for best texture.
  2. Add lemon juice just before serving.
