Ingredients

- 4 cups butternut squash, peeled and diced
- 2 tbsp canola oil
- 1/2 tbsp maple syrup
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup couscous
- 1 cup boiling water
- 1 lb ground turkey
- 1 1/2 tsp canola oil
- 1 1/2 cups red onion, minced
- 3 cups Swiss chard, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp lemon pepper seasoning
- 1 tsp paprika
- Juice from 1 lemon
Instructions
- Preheat oven to 425°F and roast seasoned squash for 35 minutes, then broil for 3 minutes.
- Prepare couscous by covering with boiling water and resting for 7 minutes.
- Cook onion, turkey, and seasonings in a pan, then add Swiss chard until turkey is done.
- Assemble couscous, turkey mixture, and roasted squash, then finish with lemon juice.
Notes
- Use lean ground turkey for best texture.
- Add lemon juice just before serving.
