Description
Turkey Shepherd’s Pie made with leftover turkey, vegetables, gravy, and mashed potatoes baked until golden.
Ingredients

- 2 tablespoons butter
- 3/4 cup onion, diced
- 3/4 cup carrots, diced
- 3/4 cup celery, diced
- 4 garlic cloves, minced
- 4 cups leftover turkey, shredded or diced
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 2 cups gravy
- 4 cups mashed potatoes
- Fresh chopped parsley
Instructions
- Preheat the oven to 375°F.
- Heat a large oven-safe skillet over medium-high heat and melt the butter.
- Add onion, carrots, celery, salt, and pepper and cook until softened.
- Stir in garlic and cook briefly.
- Add turkey, peas, corn, thyme, rosemary, and gravy and stir well.
- Warm mashed potatoes and spread evenly over the turkey mixture.
- Bake for 25 to 30 minutes, then broil briefly until the top browns.
- Garnish with parsley and serve.
Notes
- Warm mashed potatoes spread more easily.
- Broil carefully to avoid burning the topping.
