Description

Turkey Shepherd’s Pie made with leftover turkey, vegetables, gravy, and mashed potatoes baked until golden.


Ingredients

  • 2 tablespoons butter
  • 3/4 cup onion, diced
  • 3/4 cup carrots, diced
  • 3/4 cup celery, diced
  • 4 garlic cloves, minced
  • 4 cups leftover turkey, shredded or diced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 2 cups gravy
  • 4 cups mashed potatoes
  • Fresh chopped parsley

Instructions

  1. Preheat the oven to 375°F.
  2. Heat a large oven-safe skillet over medium-high heat and melt the butter.
  3. Add onion, carrots, celery, salt, and pepper and cook until softened.
  4. Stir in garlic and cook briefly.
  5. Add turkey, peas, corn, thyme, rosemary, and gravy and stir well.
  6. Warm mashed potatoes and spread evenly over the turkey mixture.
  7. Bake for 25 to 30 minutes, then broil briefly until the top browns.
  8. Garnish with parsley and serve.

Notes

  1. Warm mashed potatoes spread more easily.
  2. Broil carefully to avoid burning the topping.
