Description

Creamy, comforting, and packed with flavor, this Tuscan Chicken Pasta brings a taste of Italy to your kitchen. Juicy chicken, sun-dried tomatoes, and spinach come together in a rich Parmesan cream sauce—perfect for a cozy dinner!

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 450g / 1 lb)
  • 250g (8 oz) pasta (penne, fettuccine, or farfalle)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 100g (3.5 oz) sun-dried tomatoes, sliced
  • 2 cups (475ml) heavy cream
  • 1 cup (100g) grated Parmesan cheese
  • 2 cups (60g) fresh spinach
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste

Instructions

1️⃣ Cook the pasta: Boil pasta in salted water until al dente. Reserve ½ cup (120ml) pasta water, then drain and set aside.

2️⃣ Sear the chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a pan over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through (internal temp: 75°C / 165°F). Remove, let rest, then slice.

3️⃣ Make the sauce: In the same pan, add minced garlic and sun-dried tomatoes. Sauté for 1 minute. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese and red pepper flakes. Let simmer for 2-3 minutes until thickened.

4️⃣ Combine everything: Add spinach and stir until wilted. Toss in the cooked pasta and mix well. If the sauce is too thick, add some reserved pasta water.

5️⃣ Serve & enjoy: Top with sliced chicken, extra Parmesan, and fresh herbs. Serve warm!
