Description

Tzatziki Chickpea Salad is a refreshing and protein-packed Mediterranean dish made with creamy Greek yogurt dressing, hearty chickpeas, crisp cucumbers, juicy tomatoes, and tangy feta. It’s perfect for meal prep, light lunches, or a flavorful side at any gathering.


Ingredients

For the Salad:

  • 2 cans (425 g each) chickpeas, drained and rinsed

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ¼ red onion, finely diced

  • ¼ cup Kalamata olives, sliced (optional)

  • ¼ cup feta cheese, crumbled

  • 2 tbsp fresh dill, chopped

  • 2 tbsp fresh parsley, chopped

For the Tzatziki Dressing:

  • 1 cup Greek yogurt

  • 1 garlic clove, minced

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp white vinegar

  • ½ tsp salt (or to taste)

  • ¼ tsp black pepper

  • ½ cucumber, grated and moisture removed


Instructions

  1. In a medium bowl, whisk together Greek yogurt, garlic, olive oil, lemon juice, vinegar, salt, and pepper.

  2. Add grated, drained cucumber to the yogurt mixture and mix well. Chill.

  3. In a large bowl, combine chickpeas, diced cucumber, cherry tomatoes, red onion, olives, feta, dill, and parsley.

  4. Pour the chilled tzatziki dressing over the salad.

  5. Gently mix until evenly coated. Serve chilled or at room temperature.

Notes

Drain grated cucumber well to prevent a watery dressing.

This salad is even tastier after a few hours as the flavors meld.

Easily adapted for dairy-free diets by omitting feta and using a dairy-free yogurt.

Add leafy greens or grilled chicken to turn it into a complete meal.

Keeps well in the fridge for up to 3 days.
