Description

Fresh peaches and warm vanilla create the perfect balance in this easy Vanilla Peach Jam recipe. This small batch refrigerator jam captures sweet summer flavor in every spoonful.


Ingredients

  • 3 pounds peaches, pits removed and finely chopped
  • 1 cup sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Wash and finely chop the peaches after removing the pits.
  2. Add the chopped peaches and sugar to a deep saucepan over medium heat.
  3. Stir until the mixture begins bubbling.
  4. Reduce the heat to a simmer and cook slowly while stirring every 20 minutes.
  5. Continue cooking until the peaches break down and the jam thickens to your desired consistency.
  6. Remove the saucepan from the heat and stir in the vanilla extract.
  7. Carefully pour the hot jam into clean sterilized jars.
  8. Wipe the jar rims clean and seal tightly with lids.
  9. Allow the jars to rest undisturbed for 12 hours.
  10. Refrigerate the jam and use within 6 months.
