Ingredients
Scale
- 1 cup vegan margarine or coconut oil
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tbsp ground flaxseed (for flax egg)
- 2 1/2 tbsp water (to mix with flaxseed)
- 1/4 cup cold water
- Fruit jam, vegan chocolate, or coconut cream for filling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
- Prepare the flax egg by mixing ground flaxseed with water. Let it sit for 5 minutes until it thickens.
- In a large bowl, combine flour and sugar. Add the vegan margarine or coconut oil and mix with your hands until the mixture resembles breadcrumbs.
- Stir in the flax egg and cold water. Mix gently until a dough forms (avoid overworking).
- Roll the dough on a lightly floured surface to about 1/8 inch thickness. Cut into 4-inch squares or rectangles.
- Place a small spoonful of your chosen filling in the center of each square. Fold the dough over the filling, creating a triangle or envelope shape, and press the edges to seal.
- Arrange the pastries on the prepared baking tray. Bake for 15-20 minutes, or until golden brown and crisp.
- Let cool for 5-10 minutes. Dust with powdered sugar or drizzle vegan chocolate on top if desired.
