Description

Flaky, sweet, and plant-based, these vegan love letter pastries are perfect for any occasion. Filled with fruit preserves, vegan chocolate, or whipped coconut cream, they’re a guilt-free indulgence for everyone to enjoy!

 


Ingredients

  • 1 cup vegan margarine or coconut oil
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tbsp ground flaxseed (for flax egg)
  • 2 1/2 tbsp water (to mix with flaxseed)
  • 1/4 cup cold water
  • Fruit jam, vegan chocolate, or coconut cream for filling

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  • Prepare the flax egg by mixing ground flaxseed with water. Let it sit for 5 minutes until it thickens.
  • In a large bowl, combine flour and sugar. Add the vegan margarine or coconut oil and mix with your hands until the mixture resembles breadcrumbs.
  • Stir in the flax egg and cold water. Mix gently until a dough forms (avoid overworking).
  • Roll the dough on a lightly floured surface to about 1/8 inch thickness. Cut into 4-inch squares or rectangles.
  • Place a small spoonful of your chosen filling in the center of each square. Fold the dough over the filling, creating a triangle or envelope shape, and press the edges to seal.
  • Arrange the pastries on the prepared baking tray. Bake for 15-20 minutes, or until golden brown and crisp.
  • Let cool for 5-10 minutes. Dust with powdered sugar or drizzle vegan chocolate on top if desired.

 

Notes

  1. Chill the Dough for Flakiness: Keep the dough cold throughout the process. If it warms up while working, refrigerate it for 10-15 minutes to ensure the pastries stay flaky and light.
  2. Avoid Overfilling: Use a small amount of filling to prevent leakage during baking. Overstuffing can also make the pastries soggy.
  3. Customize Fillings Creatively: Experiment with vegan fillings like spiced apples, nut butters, or even savory options for versatility. These pastries can suit any flavor profile!
