- 10 egg roll wrappers
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup diced mushrooms
- ½ cup crumbled tofu (optional)
- 2 tbsp soy sauce
- 1 tsp grated ginger
- 1 tsp minced garlic
- 1 tbsp sesame oil (for sautéing)
- Cooking spray (for air fryer)
Instructions
- Prepare the filling: Heat sesame oil in a skillet over medium heat. Add ginger and garlic, cooking until fragrant. Stir in cabbage, carrots, mushrooms, and tofu (if using). Cook for 5-7 minutes until tender. Add soy sauce and stir well. Let the mixture cool completely.
- Assemble the rolls: Place a wrapper on a flat surface in a diamond shape. Add 2 tbsp of filling near the center. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal the edge with a dab of water.
- Preheat the air fryer: Set it to 375°F (190°C) and preheat for 3 minutes.
- Cook the rolls: Arrange the rolls in the air fryer basket in a single layer, leaving space between each one. Lightly spray with cooking oil. Air fry for 10-12 minutes, flipping halfway, until golden and crispy.
- Serve: Pair with soy sauce, sweet chili sauce, or your favorite dipping sauce for a perfect snack!
