This vegetarian lentil taco meat combines French green lentils and toasted walnuts for a hearty, savory, meatless taco filling that works for tacos, bowls, and meal prep.

- 1/2 cup walnuts, finely chopped
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 2 medium garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons taco seasoning
- 3/4 cup French green lentils, rinsed
- 3 cups low-sodium vegetable broth, plus more if needed
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper, plus more to taste
- Juice of 1/2 lime
Instructions
- Toast the walnuts in a large sauté pan over medium-low heat until lightly golden and fragrant; transfer to a bowl.
- Wipe out the pan, return it to the heat, and add olive oil.
- Add the onion and green bell pepper and cook until tender.
- Stir in the garlic, tomato paste, and taco seasoning and cook briefly until fragrant.
- Add the vegetable broth and lentils, bring to a boil, then reduce heat and simmer until lentils are tender.
- Stir in the toasted walnuts, salt, pepper, and lime juice, then adjust seasoning to taste.
Notes
- Use homemade taco seasoning if preferred.
- Add extra vegetable broth if the mixture becomes too dry while simmering.
- Flavors improve after resting and reheat well for meal prep.
