Description

This vegetarian lentil taco meat combines French green lentils and toasted walnuts for a hearty, savory, meatless taco filling that works for tacos, bowls, and meal prep.


Ingredients

  • 1/2 cup walnuts, finely chopped
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 medium garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons taco seasoning
  • 3/4 cup French green lentils, rinsed
  • 3 cups low-sodium vegetable broth, plus more if needed
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • Juice of 1/2 lime

Instructions

  1. Toast the walnuts in a large sauté pan over medium-low heat until lightly golden and fragrant; transfer to a bowl.
  2. Wipe out the pan, return it to the heat, and add olive oil.
  3. Add the onion and green bell pepper and cook until tender.
  4. Stir in the garlic, tomato paste, and taco seasoning and cook briefly until fragrant.
  5. Add the vegetable broth and lentils, bring to a boil, then reduce heat and simmer until lentils are tender.
  6. Stir in the toasted walnuts, salt, pepper, and lime juice, then adjust seasoning to taste.

Notes

  1. Use homemade taco seasoning if preferred.
  2. Add extra vegetable broth if the mixture becomes too dry while simmering.
  3. Flavors improve after resting and reheat well for meal prep.
