Instructions

  • Make Caramel: Melt sugar over medium heat, stirring constantly until it turns golden. Quickly pour the caramel into each muffin cup to coat the bottom.

  • Make Custard: In a bowl, whisk together eggs, egg yolks, whole milk, sweetened condensed milk, and vanilla extract until smooth. Strain to remove any lumps.

  • Assemble Muffins: Pour the custard mixture over the caramel in each muffin tin, filling almost to the top.

  • Prepare Water Bath: Place muffin tin in a larger pan and add hot water halfway up the sides of the muffin tin.

  • Bake: Preheat oven to 325°F (163°C) and bake for 25-30 minutes. The custard should be set but slightly wobbly in the center.

  • Cool and Chill: Let muffins cool in the water bath for 15 minutes. Then, refrigerate for at least 2 hours before inverting onto serving plates.

Notes

If the caramel hardens too quickly, reheat it gently.
