Description

A crispy, golden-breaded chicken cutlet smothered in rich, creamy vodka sauce, topped with melted mozzarella, and nestled in a toasted roll—this sandwich is a flavor-packed twist on a classic Italian favorite!

 


Ingredients

For the Vodka Sauce:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/4 cup vodka
  • 1/2 cup heavy cream
  • 1/4 tsp red pepper flakes (optional)
  • Salt & pepper to taste
  • Fresh basil, chopped

For the Chicken Parmesan:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup vegetable oil (for frying)

For the Sandwich:

  • 4 sandwich rolls (ciabatta, hoagie, or baguette)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp butter (for toasting bread)

Instructions

1️⃣ Prepare the Vodka Sauce:

  • Heat olive oil in a pan over medium heat. Add onions and garlic, sauté until softened.
  • Pour in vodka, let it simmer for 2 minutes to cook off the alcohol.
  • Add crushed tomatoes, red pepper flakes, salt, and pepper. Simmer for 10 minutes.
  • Stir in heavy cream and chopped basil. Cook for another 5 minutes. Set aside.

2️⃣ Prepare the Chicken Parmesan:

  • Flatten chicken breasts to an even thickness.
  • Season with salt, pepper, and garlic powder.
  • Dredge each breast in flour, dip in beaten egg, then coat with a mix of breadcrumbs and Parmesan.
  • Heat oil in a skillet over medium-high heat. Fry chicken until golden brown, about 3-4 minutes per side.
  • Transfer to a baking sheet, top with mozzarella, and broil until cheese melts.

3️⃣ Assemble the Sandwich:

  • Slice rolls and lightly butter them. Toast in a pan until golden.
  • Place the crispy chicken cutlet on the bottom half of each roll.
  • Spoon a generous amount of vodka sauce over the chicken.
  • Add extra mozzarella on top (optional) and close the sandwich.

  • Garnish with fresh basil and serve hot with a side of fries or salad.
