For the Vodka Sauce:
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1/4 cup vodka
- 1/2 cup heavy cream
- 1/4 tsp red pepper flakes (optional)
- Salt & pepper to taste
- Fresh basil, chopped
For the Chicken Parmesan:
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 cup vegetable oil (for frying)
For the Sandwich:
- 4 sandwich rolls (ciabatta, hoagie, or baguette)
- 1 cup shredded mozzarella cheese
- 2 tbsp butter (for toasting bread)
Instructions
1️⃣ Prepare the Vodka Sauce:
- Heat olive oil in a pan over medium heat. Add onions and garlic, sauté until softened.
- Pour in vodka, let it simmer for 2 minutes to cook off the alcohol.
- Add crushed tomatoes, red pepper flakes, salt, and pepper. Simmer for 10 minutes.
- Stir in heavy cream and chopped basil. Cook for another 5 minutes. Set aside.
2️⃣ Prepare the Chicken Parmesan:
- Flatten chicken breasts to an even thickness.
- Season with salt, pepper, and garlic powder.
- Dredge each breast in flour, dip in beaten egg, then coat with a mix of breadcrumbs and Parmesan.
- Heat oil in a skillet over medium-high heat. Fry chicken until golden brown, about 3-4 minutes per side.
- Transfer to a baking sheet, top with mozzarella, and broil until cheese melts.
3️⃣ Assemble the Sandwich:
- Slice rolls and lightly butter them. Toast in a pan until golden.
- Place the crispy chicken cutlet on the bottom half of each roll.
- Spoon a generous amount of vodka sauce over the chicken.
- Add extra mozzarella on top (optional) and close the sandwich.
