Description
Fresh and refreshing watermelon feta salad with blueberries, mint, basil, and honey lime dressing. Perfect for summer cookouts and easy entertaining.
Ingredients

- 7 to 8 cups seedless watermelon, cut into ¾-inch cubes
- 1½ cups fresh blueberries
- 1 cup crumbled feta cheese, divided
- Fresh mint leaves, thinly sliced
- Fresh basil leaves, thinly sliced
- Juice of 1½ limes
- 1 tablespoon extra virgin olive oil
- 1 to 2 tablespoons honey
- Pinch of salt
Instructions
- Cut the watermelon into bite-sized cubes and place in a large serving bowl.
- Rinse and dry the blueberries thoroughly before adding them to the bowl.
- Thinly slice the fresh mint and basil leaves.
- Combine lime juice, olive oil, honey, and salt in a mason jar and shake well.
- Add the herbs and three-quarters of the feta cheese to the bowl.
- Pour the dressing over the salad and gently toss until evenly coated.
- Top with the remaining feta cheese and garnish with extra herbs if desired.
- Serve immediately and enjoy.
Notes
- Dice the watermelon and crumble the feta 1 to 2 days ahead if needed.
- Prepare the honey lime dressing up to 3 days in advance.
- Slice fresh herbs right before serving for the best flavor.
- Optional add-ins include cucumber, strawberries, blackberries, pistachios, arugula, or pickled onions.
