Ingredients
For the crust:
- 200g (2 cups) graham cracker crumbs (or digestive biscuits)
- 100g (7 tbsp) unsalted butter, melted
For the filling:
- 400g (14 oz) high-quality white chocolate, melted
- 500g (18 oz) full-fat cream cheese, room temperature
- 100g (½ cup) granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 120ml (½ cup) heavy cream
Instructions
1️⃣ Prepare the crust:
- Crush the graham crackers or biscuits into fine crumbs.
- Mix with melted butter until well combined.
- Press the mixture firmly into the bottom of a springform pan (22cm/9-inch).
- Chill in the fridge while preparing the filling.
2️⃣ Make the filling:
- Melt the white chocolate using a double boiler or microwave in 20-second bursts, stirring in between. Let it cool slightly.
- In a large bowl, beat the cream cheese until smooth and creamy.
- Add sugar and mix until well incorporated.
- Pour in the melted white chocolate and mix gently.
- Add eggs one at a time, mixing on low speed to avoid overbeating.
- Stir in vanilla extract and heavy cream until smooth.
3️⃣ Bake the cheesecake:
- Preheat the oven to 160°C (325°F).
- Wrap the outside of the springform pan with aluminum foil to prevent water from leaking in.
- Place the pan in a large roasting dish and pour in hot water until it reaches halfway up the sides (water bath method).
- Bake for 50-60 minutes until the edges are set but the center still jiggles slightly.
- Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
4️⃣ Chill & serve:
- Remove from the oven and let it cool at room temperature.
- Refrigerate for at least 6 hours or overnight for the best texture.
- Garnish with fresh berries, chocolate ganache, or caramel sauce before serving.

Use High-Quality White Chocolate – Cheap white chocolate contains too much sugar and lacks real cocoa butter, which can affect the cheesecake’s texture and taste. Opt for premium white chocolate with at least 30% cocoa butter for the best results.
