- 1 tablespoon red pepper, finely diced
- 1 tablespoon butter
- 1 cup half and half
- 1 lb American cheese, cubed
- 1/4 cup pico de gallo
- 1/4 cup cilantro
Instructions
- Dice the jalapeno, onion, and red pepper
- Melt butter over medium heat and sauté vegetables for 5 minutes
- Remove vegetables and set aside
- Heat half and half over medium heat
- Gradually add cheese while stirring until melted and smooth
- Stir in sautéed vegetables
- Remove from heat
- Garnish with pico de gallo and cilantro
- Serve warm
