Description

Ingredients

  • 1 jalapeno, seeded and finely diced
  • 2 tablespoons yellow onion, finely diced
  • 1 tablespoon red pepper, finely diced
  • 1 tablespoon butter
  • 1 cup half and half
  • 1 lb American cheese, cubed
  • 1/4 cup pico de gallo
  • 1/4 cup cilantro

Instructions

  1. Dice the jalapeno, onion, and red pepper
  2. Melt butter over medium heat and sauté vegetables for 5 minutes
  3. Remove vegetables and set aside
  4. Heat half and half over medium heat
  5. Gradually add cheese while stirring until melted and smooth
  6. Stir in sautéed vegetables
  7. Remove from heat
  8. Garnish with pico de gallo and cilantro
  9. Serve warm

  2. A double boiler provides even heat and prevents burning
  3. Stir continuously while melting cheese
