Witch’s Cauldron Beef Stew is a hearty Halloween dinner packed with tender beef, red wine, and vegetables, simmered to spooky perfection. Ingredients
450 g (1 lb) beef stew meat
475 ml (2 cups) beef broth
240 ml (1 cup) red wine
3 carrots, sliced
2 potatoes, cubed
1 onion, chopped
2 garlic cloves, minced
2 tbsp (30 g) tomato paste
1 tsp dried thyme
1 bay leaf
Salt and pepper, to taste
4 hollowed-out bread bowls (optional)
Instructions
In a large pot, brown beef on all sides over medium heat.
Add onion and garlic; sauté until softened (2–3 minutes).
Stir in tomato paste, thyme, and bay leaf; cook 1 minute.
Pour in red wine, scraping up browned bits from the bottom of the pot.
Add beef broth, carrots, and potatoes; stir to combine.
Bring to a boil, then reduce heat and simmer uncovered for 1½ to 2 hours until beef is tender.
Season with salt and pepper.
Serve hot in toasted bread bowls for a spooky “cauldron” presentation.
Notes
Chuck roast works best for fork-tender beef.
To thicken, mash a few potato cubes toward the end of cooking.
Toast bread bowls lightly to prevent sogginess.
Store leftovers in airtight containers for up to 4 days, or freeze for up to 3 months.
Red wine can be replaced with extra beef broth if needed.
