Description
A colorful no-cook kids snack made with crisp ice cream cones, thick yogurt, strawberries, blueberries, raspberries, and banana. Children can help prepare and layer each cone for breakfast, snack time, or playdates.
Ingredients
Scale
- 4 flat-bottom ice cream cones
- 2 cups thick vanilla or plain Greek yogurt
- 1 cup strawberries, hulled and diced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 small banana, peeled and sliced
- 2 tablespoons granola, optional
- 1 tablespoon unsweetened shredded coconut, optional
- Honey for drizzling, optional and only for children over age one
Instructions
- Wash the strawberries, blueberries, and raspberries under cool running water, then dry them thoroughly.
- Remove the strawberry tops and dice the strawberries into small pieces.
- Peel the banana and slice it into thin half-moons.
- Cut large blueberries in half when needed for younger children.
- Place the yogurt, prepared fruit, and optional toppings in separate small bowls.
- Stand each cone upright in a short drinking glass or muffin pan cavity.
- Add two or three spoonfuls of mixed fruit to the bottom of each cone.
- Gently tap each cone against the counter so the fruit settles.
- Spoon yogurt over the fruit, stopping about one inch below the rim.
- Add another layer of fruit and a small dollop of yogurt.
- Top with berries, granola, coconut, or a light honey drizzle when appropriate.
- Serve immediately with a small spoon.
Notes
- Dry the fruit thoroughly to help the cones stay crisp.
- Use thick Greek-style yogurt rather than thin or watery yogurt.
- Prepare the fruit ahead, but do not assemble the cones until serving time.
- Cut fruit into safe, age-appropriate pieces and supervise young children.
- Store yogurt and cut fruit separately in the refrigerator.
- Keep unused cones sealed at room temperature.
- Do not refrigerate or store assembled cones because they become soggy.
