This Greek chicken marinade is bright, zesty, and loaded with herbs and citrus. It transforms any cut of chicken into a juicy, flavor-packed dinner that’s perfect for grilling or baking. Ideal for weeknights or meal prep, this simple recipe brings fresh Mediterranean flavors to your table.
Ingredients
4 large garlic cloves, minced
2 tsp dried oregano
1 tsp sweet paprika
1 tsp fresh thyme leaves
2 tbsp chopped flat-leaf parsley
⅓ cup extra virgin olive oil
Zest and juice of 1 lemon
½ to ¾ tsp kosher salt (to taste)
½ to ¾ tsp black pepper (to taste)
1.5 to 2 lbs chicken (any cut)
Instructions
In a large bowl, whisk together garlic, oregano, paprika, thyme, parsley, olive oil, lemon zest and juice, salt, and pepper.
Add chicken and toss to coat well.
Cover and refrigerate for 2 to 8 hours (or 30 minutes at room temp in a pinch).
For Grilling:
Preheat grill to medium and oil grates.
Grill chicken 5 minutes per side until internal temp reaches 160°F (71°C).
Let rest under foil 5–10 minutes until it reaches 165°F (74°C).
For Baking:
Preheat oven to 400°F (200°C).
Slice chicken breasts in half for even cooking if needed.
Bake covered for 10 minutes, then uncovered for 10–15 minutes more.
Broil 2 minutes for extra color if desired.
Let rest 5 minutes before serving.
Notes
Don’t marinate too long—lemon juice can start to “cook” the chicken.
Broil briefly for golden edges after baking.
Works great with any chicken cut: thighs, breasts, or drumsticks.
Use the marinade for pork, shrimp, or tofu as well.
