Description

These easy zucchini fritters are crisp outside, tender inside, and packed with Parmesan, mozzarella, garlic, and panko. They make a quick appetizer, snack, or side dish in about 30 minutes.


Ingredients

  • 3 tablespoons avocado oil, canola oil, or vegetable oil, for cooking
  • 2 cups shredded zucchini, squeezed dry, from about 2 large zucchini
  • 1 cup panko breadcrumbs, gluten-free if needed
  • 2 large eggs
  • 1/3 cup freshly grated Parmesan cheese
  • 1/4 cup finely shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly cracked black pepper

Instructions

  1. Grate the zucchini on the large holes of a box grater.
  2. Transfer the grated zucchini to a mesh bag, clean kitchen towel, or cheesecloth.
  3. Squeeze out as much liquid as possible so the fritters cook crisp instead of soggy.
  4. Place the squeezed zucchini in a mixing bowl.
  5. Add panko breadcrumbs, eggs, Parmesan cheese, mozzarella cheese, minced garlic, salt, and black pepper.
  6. Mix well until all ingredients look evenly combined.
  7. Preheat a large skillet over medium heat, then lower the heat slightly.
  8. Add the oil to the skillet.
  9. Scoop even portions of the zucchini mixture with an ice cream scoop or large spoon.
  10. Gently shape each scoop into a small patty.
  11. Place the fritters carefully into the hot skillet, leaving space between each one.
  12. Cook for 4 to 6 minutes on the first side, depending on size, until golden brown.
  13. Flip once and cook for another 4 to 6 minutes, until the second side turns golden and the center cooks through.
  14. Transfer the fritters to a plate lined with paper towels if desired.
  15. Add a little more oil between batches if needed and repeat with the remaining mixture.
  16. Serve warm with sour cream, Greek yogurt, ranch, or lemon wedges.

Notes

  1. Squeeze the zucchini very well before mixing it with the remaining ingredients.
  2. Do not cook the fritters over high heat because the outside may brown before the center cooks through.
  3. Flip the fritters only once when possible so they hold their shape.
  4. Use gluten-free panko breadcrumbs if you want the recipe to fit a gluten-free diet.
  5. For extra flavor, add chopped parsley, dill, or green onion to the mixture.
