Description

Zucchini Fritters are golden, pan-fried patties made from fresh summer zucchini, aromatic herbs, red onion, and garlic, optionally enriched with feta cheese. With a crispy exterior and tender center, they exemplify Mediterranean simplicity and are ideal as a main course, side, or appetizer. Quick to prepare and deeply satisfying, they offer a flavorful, textural contrast in every bite.

  • 900 g zucchini, grated (approx. 4 medium)

  • 1 tsp salt (for draining)

  • 1 large egg

  • 1 large red onion, thinly sliced

  • 2 garlic cloves, grated

  • 1 tsp dried oregano or dill

  • ¾ cup all-purpose flour

  • 2 tsp baking powder

  • ¾ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp extra virgin olive oil, plus more for frying

  • 115 g crumbled feta cheese (optional)


Instructions

  1. Grate the zucchini and mix with 1 tsp salt. Place in a colander over a bowl and let drain for 10 minutes.

  2. Squeeze out excess moisture using a clean kitchen towel or cheesecloth. This step is non-negotiable for optimal crispness.

  3. In a mixing bowl, whisk the egg. Incorporate the drained zucchini, onion, garlic, oregano (or dill), flour, baking powder, salt, pepper, olive oil, and feta (if using). Mix until a thick batter forms.

  4. Heat olive oil in a skillet over medium-high heat.

  5. Spoon the batter into the pan in mounds and flatten slightly with a spatula.

  6. Fry each fritter for 3–4 minutes per side, until golden brown and crisp.

  7. Transfer to a paper towel–lined plate. Repeat with remaining batter, adding oil as needed.

Notes

Drain zucchini thoroughly to prevent excess moisture compromising the structural integrity of the fritters.

A cast-iron skillet ensures maximum heat retention and superior crisping.

These fritters can be customized with fresh herbs (e.g., mint, parsley, basil) or enhanced with spices like smoked paprika.

For a healthier preparation, fritters may be baked or air-fried, though this will slightly alter their texture.

Serve with a creamy accompaniment like tzatziki or herbed yogurt to amplify their Mediterranean character.
