Description

Perfectly spiced zucchini gingerbread with molasses, ginger, cinnamon, and cloves. Moist, tender, and ideal for the holiday season.


Ingredients

Scale
  • 1½ cups finely grated zucchini
  • ½ cup brown sugar
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup molasses
  • ¼ cup hot water
  • Confectioners sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F and prepare a 9×5 loaf pan.
  2. Combine zucchini, brown sugar, oil, eggs, and vanilla.
  3. Whisk flour, baking soda, ginger, cinnamon, cloves, and salt.
  4. Whisk molasses and hot water until smooth.
  5. Mix half the dry ingredients into wet ingredients.
  6. Add half the molasses mixture and stir.
  7. Repeat with remaining dry ingredients and molasses mixture.
  8. Pour batter into loaf pan.
  9. Bake 48 to 55 minutes until done.
  10. Cool completely before slicing and serving.

Notes

  1. Store at room temperature for 3 to 4 days.
  2. Refrigerate up to 7 days if very moist.
  3. Freeze up to 6 months.
  4. Dust with confectioners sugar before serving if desired.
