Description

Classic zucchini onion pie made with eggs, Parmesan cheese, onion, and baking mix. Easy to prepare and perfect for lunch, dinner, or brunch.


Ingredients

  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 cup canola oil
  • 1 tablespoon minced fresh parsley
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 cups sliced zucchini
  • 1 cup biscuit/baking mix
  • 1 small onion, chopped

Instructions

  1. Preheat oven to 350°F and grease a 9-inch deep-dish pie plate.
  2. Whisk eggs, Parmesan cheese, canola oil, parsley, garlic, salt, and pepper in a large bowl.
  3. Stir in zucchini, baking mix, and chopped onion until combined.
  4. Pour mixture into prepared pie plate and spread evenly.
  5. Bake for 25 to 35 minutes until lightly browned and set.
  6. Cool for several minutes before slicing and serving.

Notes

  1. Use firm fresh zucchini for best texture.
  2. Allow pie to rest before slicing.
