- 1 cup grated Parmesan cheese
- 1/2 cup canola oil
- 1 tablespoon minced fresh parsley
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 cups sliced zucchini
- 1 cup biscuit/baking mix
- 1 small onion, chopped
Instructions
- Preheat oven to 350°F and grease a 9-inch deep-dish pie plate.
- Whisk eggs, Parmesan cheese, canola oil, parsley, garlic, salt, and pepper in a large bowl.
- Stir in zucchini, baking mix, and chopped onion until combined.
- Pour mixture into prepared pie plate and spread evenly.
- Bake for 25 to 35 minutes until lightly browned and set.
- Cool for several minutes before slicing and serving.

- Use firm fresh zucchini for best texture.
- Allow pie to rest before slicing.
- Store leftovers in the refrigerator for up to 4 days.
