- 3 medium zucchini, grated (about 4 cups)
- 1 large egg
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 3 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1/4 cup cornstarch
- Kosher salt
- Black pepper
- 1/4 cup pizza sauce
- 1/4 cup pepperoni
- Pinch red pepper flakes
- Fresh basil
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Grate zucchini and squeeze out excess moisture with a towel or cheesecloth.
- Mix zucchini, egg, garlic, oregano, 1 cup mozzarella, Parmesan, cornstarch, salt, and pepper.
- Shape mixture into a pizza crust on the baking sheet.
- Bake for 25 minutes until golden.
- Spread pizza sauce over crust.
- Top with remaining mozzarella and pepperoni.
- Bake for 10 minutes more until cheese melts and crust crisps.
- Garnish with basil and red pepper flakes before serving.
Notes
- Remove as much moisture as possible from zucchini.
- Do not overload with toppings.
- Reheat leftovers in the oven for best texture.
