Description

A crispy and cheesy zucchini pizza crust topped with sauce, mozzarella, and pepperoni for an easy low-carb meal.


Ingredients

Scale
  • 3 medium zucchini, grated (about 4 cups)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 3 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup cornstarch
  • Kosher salt
  • Black pepper
  • 1/4 cup pizza sauce
  • 1/4 cup pepperoni
  • Pinch red pepper flakes
  • Fresh basil

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Grate zucchini and squeeze out excess moisture with a towel or cheesecloth.
  3. Mix zucchini, egg, garlic, oregano, 1 cup mozzarella, Parmesan, cornstarch, salt, and pepper.
  4. Shape mixture into a pizza crust on the baking sheet.
  5. Bake for 25 minutes until golden.
  6. Spread pizza sauce over crust.
  7. Top with remaining mozzarella and pepperoni.
  8. Bake for 10 minutes more until cheese melts and crust crisps.
  9. Garnish with basil and red pepper flakes before serving.

Notes

  1. Remove as much moisture as possible from zucchini.
  2. Do not overload with toppings.
  3. Reheat leftovers in the oven for best texture.
