Description

Crispy zucchini potato pancakes made with grated zucchini, potatoes, and onions, pan fried until golden brown and delicious.


Ingredients

  • 1 medium zucchini
  • 2 medium potatoes, peeled
  • 1 small onion
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/4 cup cooking oil

Instructions

  1. Grate zucchini, potatoes, and onion.
  2. Squeeze excess liquid from vegetables using paper towels or a kitchen towel.
  3. Combine vegetables with egg, flour, salt, garlic powder, and pepper.
  4. Heat oil in a skillet over medium heat.
  5. Drop 1/4 cup portions of batter into the skillet and flatten gently.
  6. Cook 2 to 3 minutes per side until golden brown.
  7. Transfer to a paper towel-lined plate.
  8. Repeat with remaining batter and serve warm.

Notes

  1. Squeeze excess liquid thoroughly for crispy pancakes.
  2. Use only enough oil to prevent sticking.
  3. Store leftovers in the refrigerator for 3 to 4 days.
  4. Reheat in a skillet or oven for best texture.
