For the Crust:

  • 2 cups (204 g) graham cracker crumbs (about 1213 full sheets, crushed)
  • ½ teaspoon cinnamon
  • ½ cup (1 stick / 113 g) unsalted butter, melted

For the Filling:

  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • 2 cups (476 g) heavy cream
  • ¾ teaspoon fresh lemon juice
  • ½ cup (120 g) apple butter

Instructions

  1. Prepare the Crust: In a medium bowl, combine graham cracker crumbs and cinnamon. Add melted butter and mix well. Press the mixture into the bottom and up the sides of a 9-inch springform pan. Chill in the refrigerator.
  2. Make the Filling: In a large mixing bowl, beat the cream cheese and sugar until creamy. Add heavy cream and lemon juice, beating until fluffy. Pour over the crust.
  3. Add Apple Butter: Dollop apple butter over the filling. Swirl with a knife or spatula, careful not to disturb the crust.
  4. Chill: Refrigerate for at least 6 hours, or until firm.
