Description

These Beef and Cheese Butter Swim Biscuits are the ultimate comfort food! The buttery “swim” method creates a crispy golden crust while keeping the inside tender and rich. Pair them with a bowl of soup or enjoy them on their own—either way, they’re absolutely irresistible!


Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup (240ml) buttermilk
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 lb (225g) ground beef
  • 1 cup (120g) shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1 tbsp chopped chives (optional)

Instructions

  • Preheat oven to 400°F (200°C) and grease an 8×8-inch (20×20 cm) baking dish.
  • Cook the beef in a skillet over medium heat, seasoning with garlic powder and salt. Drain excess grease and set aside.
  • Make the biscuit dough by combining flour, baking powder, and salt in a bowl. Stir in buttermilk until a sticky dough forms.
  • Melt the butter and pour half of it into the baking dish. Spread the dough evenly over the butter.
  • Add the toppings by evenly sprinkling cooked ground beef and shredded cheddar cheese over the dough.
  • Pour the remaining butter over the top and bake for 20-25 minutes until golden brown.
  • Let cool for a few minutes, slice, and enjoy!

Notes

1️⃣ Drain the Beef Well – After cooking the ground beef, make sure to drain any excess grease. This prevents the biscuits from becoming too oily and helps maintain a fluffy texture.

2️⃣ Don’t Overmix the Dough – Stir the ingredients until just combined. Overmixing can lead to dense, tough biscuits instead of light and fluffy ones.

3️⃣ Use Real Buttermilk for Best Results – Buttermilk gives these biscuits a tender, rich texture. If you don’t have any, make a substitute by mixing 1 cup (240ml) of milk with 1 tbsp of vinegar or lemon juice and let it sit for 5 minutes before using.
