Description

Juicy ground beef, tender onion, and two layers of melted cheddar fill soft dinner rolls in these easy 30-minute Cheeseburger Sliders. A buttery sesame topping gives the pull-apart sliders a golden finish that makes them perfect for parties, game day, potlucks, or a quick family dinner.

  • 2 pounds lean ground beef, 90/10 or 93/7
  • 1/2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 large yellow onion, finely diced
  • 1/4 cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 ounces medium cheddar cheese, freshly shredded
  • 24 connected dinner rolls
  • 2 tablespoons unsalted butter, melted
  • Extra softened butter for greasing the baking sheet
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat the oven to 350°F and grease the bottom of a rimmed baking sheet or 9-by-13-inch baking dish with softened butter.
  2. Place a large skillet over medium-high heat and add the olive oil.
  3. Add the diced onion, then add the ground beef and break it into small crumbles with a spatula.
  4. Season the beef with salt, black pepper, and garlic powder.
  5. Cook for 6 to 8 minutes, stirring often, until the beef is fully cooked and no pink remains.
  6. Tilt the skillet carefully and spoon away the excess fat.
  7. Remove the skillet from the heat and stir the mayonnaise into the warm beef mixture.
  8. Keep the dinner rolls connected and slice the entire group horizontally through the center with a serrated knife.
  9. Place the bottom slab of rolls on the prepared baking sheet.
  10. Arrange the sliced cheddar evenly over the bottom rolls.
  11. Spread the beef mixture evenly over the sliced cheese and press it into the corners.
  12. Scatter the shredded cheddar evenly over the beef.
  13. Place the top slab of rolls over the shredded cheese.
  14. Brush the tops with melted butter and sprinkle them evenly with sesame seeds.
  15. Bake for 12 to 15 minutes, until the cheese melts and the tops turn golden brown.
  16. Rest the sliders for 5 minutes, then cut along the roll seams and serve warm.

Notes

  1. Use 90/10 or 93/7 ground beef to prevent excess grease from soaking the rolls.
  2. Drain the cooked beef before adding the mayonnaise.
  3. Keep the rolls connected while slicing and assembling for faster, neater preparation.
  4. The sliced cheese under the beef creates a moisture barrier that helps keep the bottom rolls from becoming soggy.
  5. For make-ahead sliders, assemble them up to 24 hours in advance, cover, and refrigerate.
  6. Brush with melted butter and add sesame seeds just before baking.
