A cozy, creamy, one-skillet Cajun chicken pasta that’s loaded with cheesy goodness and bold garlic-Cajun flavor. This 30-minute rotini dish wraps tender chicken and spirals of pasta in a velvety sauce that’s perfect for busy weeknights or an indulgent dinner treat.
Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized chunks
12 oz rotini pasta
2 tbsp olive oil
2 tbsp Cajun seasoning
1 tsp garlic powder
½ tsp onion powder
Salt and pepper, to taste
4 garlic cloves, minced
1 tbsp butter
1 cup heavy cream
½ cup chicken broth
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ cup shredded cheddar cheese
Fresh parsley, chopped (for garnish)
Instructions
Bring a large pot of salted water to a boil. Cook rotini until al dente, 8–10 minutes. Drain and set aside.
While pasta cooks, heat olive oil in a large skillet over medium-high heat.
Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
Cook chicken in skillet for 6–8 minutes until golden and fully cooked. Remove and set aside.
In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.
Pour in heavy cream and chicken broth. Simmer for 2–3 minutes.
Stir in mozzarella, Parmesan, and cheddar until sauce is smooth and creamy.
Return chicken and rotini to skillet. Toss to coat.
Simmer on low for 2–3 minutes to blend flavors.
Garnish with fresh parsley and serve hot.
Notes
Use freshly shredded cheeses for the smoothest sauce.
Adjust Cajun seasoning to your preferred spice level.
Add veggies like baby spinach, bell peppers, or sun-dried tomatoes for extra color and nutrition.
Store leftovers in an airtight container for up to 4 days. Add a splash of milk or cream when reheating.
