Description

Ingredients

Scale
  • 300 g butternut squash, peeled and cubed (2 cups)
  • 250 g carrots, peeled and sliced (2 cups)
  • 300 g potatoes, chopped (2 cups)
  • 200 g celery, chopped (2 cups)
  • 200 g green lentils (1 cup)
  • 140 g yellow split peas, or extra lentils (3/4 cup)
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 22.5 liters vegetable or chicken broth (810 cups)
  • 2 teaspoons herbes de Provence
  • 1 teaspoon salt (more to taste)

Add at the end:

  • 23 cups (about 100150 g) kale, stems removed and chopped
  • 1 cup parsley, chopped
  • 120 ml olive oil (preferably rosemary or herb-infused)
  • A swish of sherry, red wine vinegar, or lemon juice

Instructions

  • Place the butternut squash, carrots, potatoes, celery, lentils, split peas, onion, garlic, broth, herbes de Provence, and salt into the crockpot.
  • Cover and cook on high for 5-6 hours or low for 7-8 hours until the vegetables and lentils are tender.
  • Remove about 4 cups of soup and place in a blender with the olive oil.
  • Pulse gently until the mixture is semi-smooth and creamy, allowing the olive oil to emulsify with the soup.
  • Return the blended mixture to the crockpot and stir well to combine.
  • Add the chopped kale and parsley, stir in, and turn off the heat.
  • Let the soup rest for a few minutes to allow the flavors and texture to meld.
  • Season with a swish of sherry, vinegar, or lemon juice to taste for a bright, tangy finish.
  • Serve with crusty wheat bread and a sprinkle of Parmesan cheese if desired.

Notes

Blend more or less soup depending on your desired texture.

Swap in spinach for kale if preferred.

Add extra broth if a thinner consistency is desired.

Fresh lemon juice really brightens the flavors.
