Ingredients

  • 3 cups chopped rotisserie chicken (chilled)

  • 2/3 cup full-fat Greek yogurt

  • 1 tbsp Dijon mustard

  • Juice of 1/2 lemon

  • 1/3 cup chopped green onion

  • 3/4 cup chopped seedless cucumber, peeled

  • 1/2 cup chopped celery

  • 1/4 cup fresh parsley, chopped

  • 1 tsp dried dill (or 1 tbsp fresh dill, finely chopped)

  • 1 tsp sea salt

  • 1/4 tsp freshly ground black pepper


Instructions

  • In a large mixing bowl, combine chicken, Greek yogurt, Dijon mustard, and lemon juice. Stir until evenly coated.

  • Add green onion, cucumber, celery, parsley, dill, salt, and pepper. Mix well.

  • Taste and adjust seasoning with extra lemon juice, salt, or pepper if desired.

  • Serve immediately for maximum crunch, or chill for 30 minutes to let flavors meld.

Notes

Use plain or lightly seasoned rotisserie chicken for best results.

Pat cucumber dry with a paper towel to reduce extra moisture.
