Description

  • 8 slices white bread

  • 2 large eggs

  • 60 ml (¼ cup) milk

  • 12 g (1 tbsp) sugar

  • 1 tsp (5 ml) vanilla extract

  • 45 g (3 tbsp) butter, for frying

Cinnamon Sugar Coating:

  • 50 g (¼ cup) sugar

  • 1 tsp (2.5 g) ground cinnamon


Instructions

  • Tear each slice of bread into 4 pieces; roll each into a tight ball (remove crusts if desired).

  • In a bowl, whisk together eggs, milk, sugar, and vanilla.

  • Dip each bread ball briefly into the egg mixture to coat.

  • Heat butter in a skillet over medium heat.

  • Fry nuggets in batches, turning to brown evenly, about 4 minutes total.

  • Mix cinnamon and sugar in a zip-top bag.

  • While warm, toss nuggets in the cinnamon sugar mixture.

  • Serve warm with maple syrup, fruit, or yogurt.

Notes

Use day-old bread for better shape and texture.

Avoid over-soaking in the egg mixture to keep them from falling apart.

Freeze after cooking and reheat for quick weekday breakfasts.
