Ingredients
Meat & Veggies:
1 lb chicken breast, cubed
1 lb pork loin, cubed
1 onion, chopped
2 cloves garlic, minced
1 cup mushrooms, sliced
1 cup carrots, diced
1 cup peas
Sauce & Seasoning:
1 cup chicken broth
1 cup heavy cream
1 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
1 tsp salt
1 tsp black pepper
Cake Batter:
1 cup all-purpose flour
1 tsp baking powder
1/2 cup melted butter
1/2 cup milk
1/2 cup grated Parmesan cheese
Instructions
Preheat oven to 375°F (190°C).
In a skillet, cook chicken and pork over medium heat until browned. Remove and set aside.
In the same skillet, sauté onion and garlic until soft.
Add mushrooms, carrots, and peas. Cook for 5 minutes.
Stir in broth and cream. Bring to a simmer.
Return chicken and pork to skillet. Add thyme, parsley, salt, and pepper. Simmer for 10 minutes.
In a bowl, mix flour and baking powder. Add melted butter and milk. Stir to combine into a batter.
Grease a 9-inch round cake pan. Pour in batter and spread evenly.
Spoon the fricassee mixture over the batter.
Sprinkle Parmesan cheese on top.
Bake for 30 minutes until golden brown.
Cool for 10 minutes before slicing and serving.
