Description

These Keto Philly Cheesesteak Roll Ups are a low-carb twist on the classic sandwich, combining juicy beef, peppers, onions, and melted provolone, all wrapped in a warm low-carb tortilla. Ready in just 30 minutes, this easy keto dinner recipe is hearty, cheesy, and perfect for busy weeknights or meal prep.


Ingredients

  • 1 lb thinly sliced ribeye or sirloin beef

  • 8 oz provolone cheese, sliced

  • 1 cup mixed bell peppers, chopped

  • 1 medium sweet onion, chopped

  • 2 tbsp olive oil

  • 4 low-carb tortillas

  • Salt and black pepper, to taste


Instructions

  • Slice beef into thin strips; chop peppers and onion.

  • Heat olive oil in a skillet over medium heat. Sauté peppers and onion 5–7 minutes until softened.

  • Increase heat to medium-high. Add beef, season with salt and pepper, and cook 3–5 minutes until browned.

  • Lower heat to low. Place provolone slices over beef mixture and let melt.

  • Spoon cheesy beef and veggie mixture into tortillas. Roll tightly into wraps.

  • Return roll-ups seam-side down to skillet. Cook 3–4 minutes, turning until golden on all sides.

  • Serve hot, sliced in halves or whole.

Notes

Ribeye is best for tenderness, but sirloin also works well.

Don’t overcook the beef—quick searing keeps it juicy.

Provolone is classic, but mozzarella or Monterey Jack can be substituted.

For a totally carb-free option, skip tortillas and use lettuce wraps.
