For the blondies:

  • 240 g (2 cups) all-purpose flour

  • 50 g (¼ cup) granulated sugar

  • 200 g (1 cup) dark brown sugar

  • 2 large eggs

  • 7.5 ml (1½ tsp) vanilla extract

  • 1 g (½ tsp) ground cinnamon

For the apple filling:

  • 2 large apples, finely chopped

  • 25 g (2 tbsp) brown sugar

  • 14 g (1 tbsp) butter

  • 2.5 ml (½ tsp) vanilla extract

  • 1 g (½ tsp) ground cinnamon

For the maple glaze:

  • 28 g (2 tbsp) butter

  • 60 ml (¼ cup) pure maple syrup

  • 60 g (½ cup) powdered sugar

  • 1.25 ml (¼ tsp) vanilla extract

  • 0.5 g (⅛ tsp) ground cinnamon


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 11×7-inch baking pan with foil.

  2. Make the apple filling: Cook chopped apples with brown sugar, butter, cinnamon, and vanilla over medium-low heat for 3–4 minutes. Let cool.

  3. Prepare blondie batter: Cream butter, granulated sugar, and brown sugar. Add eggs, vanilla, and salt. In a separate bowl, whisk flour, baking powder, and cinnamon. Mix dry ingredients into the wet until just combined.

  4. Spread half the blondie batter in the pan. Add cooled apple filling evenly. Top with remaining batter and gently spread.

  5. Bake for 25–30 minutes or until golden and a toothpick comes out clean.

  6. Make the maple glaze: Melt butter, maple syrup, vanilla, and cinnamon. Remove from heat and whisk in powdered sugar. Cool for 8–10 minutes.

  7. Pour glaze over slightly cooled blondies. Let glaze set fully before slicing.

Cooling the apple filling prevents soggy blondies.
