Description

Melt In Your Mouth Chicken is a creamy baked chicken recipe that lives up to its name—juicy, tender chicken breasts smothered in a rich, cheesy topping that bakes to golden perfection. Quick to prep, low-carb, and incredibly flavorful, it’s an easy weeknight dinner the whole family will love.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 1 cup mayonnaise or plain Greek yogurt

  • ½ cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt

  • ½ tsp black pepper

  • Optional: ½ tsp paprika or Italian seasoning

Instructions

  • Preheat oven to 375°F (190°C). Grease or line a 9×13-inch baking dish.

  • Pound chicken breasts to an even ¾-inch thickness for even cooking.

  • In a bowl, mix mayo or yogurt, Parmesan, garlic powder, onion powder, salt, and pepper.

  • Spread mixture evenly over each chicken breast.

  • Place chicken in the baking dish. Sprinkle paprika or Italian seasoning if using.

  • Bake uncovered for 35–45 minutes, or until the chicken reaches 165°F (74°C) and topping is bubbly and golden.

  • Rest for 5 minutes before serving.

Notes

Use Greek yogurt for a tangier flavor or mayo for a richer texture.

Pounding the chicken ensures even cooking and tenderness.

Letting the chicken rest locks in juices.

Pair with low-carb sides like roasted vegetables or cauliflower mash for a keto-friendly meal.
