Slow Cooker Beef Bites & Potatoes are the ultimate one-pot comfort food. Tender beef and baby potatoes simmer all day in a rich garlic butter sauce, creating a hearty, gluten-free meal with minimal effort. Perfect for busy weeknights or cozy family dinners.
Ingredients
2 lbs beef stew meat
1.5 lbs baby potatoes, halved
6 cloves garlic, minced
1/2 tsp onion powder
1 tsp dried oregano
2 tbsp fresh parsley, chopped
1/2 tsp dried thyme
1 tsp smoked paprika
1/2 tsp red pepper flakes
1 tsp salt
1/2 tsp black pepper
1 cup beef broth
1 tbsp Worcestershire sauce
4 tbsp unsalted butter, sliced
1 tbsp cornstarch + 2 tbsp water (for thickening)
Instructions
Place beef stew meat at the bottom of the slow cooker.
Wash and halve baby potatoes; layer them over the beef.
In a small bowl, mix garlic, onion powder, oregano, parsley, thyme, paprika, red pepper flakes, salt, and black pepper. Sprinkle evenly over the meat and potatoes.
Pour in beef broth and Worcestershire sauce. Stir gently.
Top with sliced butter.
Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender.
Mix cornstarch with water. Stir into the slow cooker. Cover and cook on high for 15 minutes until thickened.
Garnish with extra parsley before serving.
Notes
Browning the beef beforehand adds extra flavor but is optional.
Use waxy potatoes (like Yukon Golds) to maintain shape.
Adjust red pepper flakes to taste.
Store leftovers in the fridge for 4 days or freeze for up to 3 months.
