Description

Soft, chewy, and irresistibly rich, these peanut butter cookies are a timeless classic! Perfect with milk or as a standalone treat, they’re easy to make and even easier to enjoy.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder

Instructions

  • Prepare the Wet Mixture: In a mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes). Add peanut butter and mix well. Crack in the egg and pour in the vanilla extract. Blend until smooth.
  • Incorporate Dry Ingredients: Sift together the flour and baking powder in a separate bowl. Gradually mix the dry ingredients into the wet mixture until fully combined. Avoid overmixing.
  • Shape the Cookies: Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet. Flatten each ball gently with a fork in a criss-cross pattern.
  • Bake: Preheat the oven to 350°F (175°C). Bake the cookies for 8–10 minutes, or until the edges are golden brown. The centers will still look soft but will firm up as they cool.
  • Cool and Store: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Store in an airtight container for up to 1 week or freeze for up to 3 months.

Notes

  • Use Creamy, No-Stir Peanut Butter: For the best texture and flavor, opt for creamy, no-stir peanut butter. Natural peanut butter can separate and may affect the dough’s consistency.
  • Avoid Overmixing the Dough: When combining the dry and wet ingredients, mix just until combined to keep the cookies soft and chewy. Overmixing can make the cookies dense and tough.
  • Don’t Overbake: The cookies will look slightly underdone when you take them out of the oven. Let them cool on the baking sheet for a few minutes—they’ll firm up as they cool while staying soft in the center.
