Description

Creamy Rainbow Popsicles made with instant vanilla pudding, milk, and colorful layers. Small paper cups make these cheerful frozen treats easy to assemble, freeze, peel, and serve.


Ingredients

  • 1 box instant vanilla pudding mix, 3.4 ounces
  • 2 2/3 cups cold whole milk
  • 6 drops red food coloring
  • 6 drops yellow food coloring
  • 6 drops green food coloring
  • 6 drops blue food coloring
  • 1 additional drop red food coloring for the orange layer
  • 8 small paper cups, 3-ounce size
  • 8 wooden popsicle sticks
  • 8 small squares aluminum foil

Instructions

  1. Pour the cold milk into a large mixing bowl and add the instant vanilla pudding mix.
  2. Whisk for about 2 minutes, until smooth and slightly thicker than milk.
  3. Divide the pudding evenly among 5 small bowls.
  4. Color the first bowl red with 6 drops red food coloring.
  5. Color the second bowl orange with 1 drop red and 5 drops yellow food coloring.
  6. Color the third bowl yellow with 6 drops yellow food coloring.
  7. Color the fourth bowl green with 6 drops green food coloring.
  8. Color the fifth bowl blue with 6 drops blue food coloring.
  9. Arrange the paper cups upright in a loaf pan or small baking dish.
  10. Spoon blue pudding into the bottom of each cup and gently tap the pan to level it.
  11. Repeat the layering process with green, yellow, orange, and red pudding.
  12. Cover each cup with a small square of aluminum foil.
  13. Cut a small slit in the center of each foil cover.
  14. Push a wooden popsicle stick through each slit and down to the bottom of the cup.
  15. Freeze the popsicles on a level shelf for at least 6 hours or overnight.
  16. Tear the rim of each paper cup and peel the cup away before serving.

Notes

  1. Use cold whole milk for the creamiest texture.
  2. Work quickly because instant pudding continues to thicken as it rests.
  3. Use a separate spoon for every color to keep the layers bright.
  4. For a birthday-cake flavor, add 1/4 teaspoon almond extract to the milk.
  5. Keep the cups upright and level while filling and freezing.
  6. Store frozen pops in their paper cups inside a freezer-safe container for up to 2 weeks.
