Ingredients
1.5 lb (680 g) beef stew meat, cut into bite-sized pieces
1 lb (450 g) baby potatoes, halved
4 tbsp (60 g) unsalted butter, melted
3 cloves garlic, minced
1 tsp onion powder
1 tsp smoked paprika
½ tsp dried thyme
½ tsp dried rosemary
½ tsp salt (or to taste)
¼ tsp black pepper
¼ cup (60 ml) beef broth
1 tbsp (15 ml) olive oil (for searing)
Instructions
Prep ingredients: Cut beef into chunks and halve potatoes. Optional: parboil potatoes 3–4 minutes for faster cooking.
Sear beef: Heat olive oil in skillet over medium-high. Brown beef in batches, 2–3 minutes per side.
Mix sauce: In a bowl, whisk butter, garlic, onion powder, paprika, thyme, rosemary, salt, and pepper.
Slow cook: Add beef and potatoes to slow cooker. Pour garlic butter sauce over top. Add beef broth.
Cook: Cover and cook on low 6–8 hours or high 3–4 hours until beef is tender and potatoes soft.
Rest & serve: Let sit 10 minutes before serving for best flavor.
Notes
Searing beef adds flavor—don’t skip this step if possible.
Keep potatoes evenly sized for even cooking.
Add carrots or green beans in the last hour for extra veggies.
If cooking stovetop: simmer covered 1.5–2 hours until tender.
For richer flavor, stir in extra butter just before serving.
