Instructions

  • Preheat Oven: Set oven to 350°F (177°C) for convection or 325°F (163°C) for conventional. Line two baking sheets with parchment paper.

  • Melt Butter: Melt butter in a medium bowl in the microwave for 20–30 seconds. Let cool slightly if too hot.

  • Mix Wet Ingredients: Whisk in brown sugar for about 1 minute. Add egg and vanilla; whisk until smooth.

  • Combine Dry Ingredients: Fold in flour, fine sea salt, and baking powder until just combined.

  • Add Mix-ins: Gently fold in freeze-dried strawberries and white chocolate chips.

  • Shape Dough: Divide dough into 7 cookies (about 57 g each), spacing them on sheets.

  • Bake: Bake one sheet at a time for 10–12 minutes until edges are golden and centers are puffed.

  • Cool and Finish: Tap tray on counter to flatten cookies slightly. Optionally shape with a round cutter. Sprinkle with flaky salt and strawberry pieces. Let cool 5–10 minutes before transferring.
