Description

This Watermelon Salad with Cucumber and Feta is a cool and vibrant summer side dish. Juicy watermelon, crunchy cucumber, creamy feta, and fresh mint come together in a refreshing lime dressing for the perfect sweet-and-salty balance. It’s quick to make, beautiful to serve, and ideal for hot weather gatherings.

Ingredients

Scale

For the Dressing:

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp chopped fresh mint (plus more for garnish, optional)

  • 1 tbsp lime juice

  • ¼ tsp fine sea salt (or to taste)

  • Pinch of black pepper (or to taste)

For the Salad:

  • 3 cups (450 g) cubed watermelon

  • 1 cup (130 g) quartered cucumber

  • ⅓ cup (50 g) crumbled feta cheese (plus more for garnish, optional)

Instructions

  • In a large bowl, whisk together olive oil, mint, lime juice, salt, and pepper.

  • Add watermelon cubes, cucumber, and crumbled feta to the bowl.

  • Gently toss to coat all ingredients in the dressing.

  • Garnish with extra mint and feta if desired. Serve immediately, chilled.

Notes

Use cold watermelon and cucumber for best texture.

Sprinkle with chili flakes or drizzle with balsamic glaze for added depth.

Crumble your own feta for creamier texture.

Serve on a wide platter for visual appeal.
