Instructions
-
Cook the Pasta
Boil rotini in salted water until al dente. Drain and set aside. -
Brown the Beef
Heat olive oil in a skillet. Add ground beef and cook until browned. Stir in ranch seasoning. Drain excess fat. -
Mix Ingredients
In a large bowl, combine pasta, beef, corn, ranch dressing, sour cream, and 1 cup of cheddar cheese. Stir until evenly mixed. -
Assemble the Bake
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Spread the pasta mixture evenly in the dish. -
Top and Bake
Sprinkle remaining cheese over the top. Cover with foil and bake for 20 minutes. Remove foil and bake for 10 more minutes until bubbly and golden. -
Cool and Serve
Let rest for 5 minutes. Garnish with green onions or parsley if desired.
Notes
Don’t overcook the pasta—it finishes cooking in the oven.
Add a splash of milk or ranch when reheating to keep it creamy.
This recipe is great for freezing in individual portions.
